RECIPE: Apple-Cucumber Juice

While most of Trinidad is in recovery after a powerful Monday and Tuesday, it helps to have easy recipes to jumpstart the recovery process. We’re featuring a detoxifying but delicious and refreshing juice and make-ahead, mini-quiches. Though these recipes are perfect for the Wednesday after Carnival, either would be great to add to your weekly line-up of meals.
Apple-Cucumber Juice
Cucumber and coconut water are both hydrating and detoxifying elements of this smoothie which work to replenish your body after two hard days of fete-ing. Blended apples lend a sweetness to the juice that stops it from tasting even remotely healthy while lime juice balances the entire flavour profile.
We blend and strain this juice, however, if you don’t mind the pulp or, want extra roughage in your diet, skip this step. Additionally, if you are more interested in a smoothie then, blend, strain and blend again with ice. Don’t let the green colour scare you, the juice is satisfying and delicious.

½ cup chopped cucumber
1 cup chopped apple
½ cup spinach or kale leaves
1 cup coconut water
2 tablespoons lime juice
1 In a blender, blend all ingredients until smooth, about 45 seconds.
2 Using a strainer, strain over a glass or jug. Ensure to press the pulp into the strainer with the back of a spoon in order to extract all of the juice.
3 Serve chilled or over ice.
